Wondering if anyone would like to help out.
This is a recipe for mango pudding that mum gave me. It's kind of old and basic to be honest and I know it works, but I recently passed it onto Jim over in the UK and apparently something's wrong. I want to make sure there's nothing wrong with my translation (as it has gone from chinese to english)
So here it is, we just made another one, and it's ready in the fridge, but I want to know if others can read and understand my version in English :S ==============
Mango Pudding lolol
note: They actually mean chinese soup spoon, and I should try and come up with a completely metrix/imperial measurement version one day.
The following serves about 8-10, and goes into one of them "tire" molds.
Gelatine powder - 3 tbs (mix with 8oz water)
Custard powder - 2 tbs (mix corn starch and custard powder with 4tbs water) corn starch - 2 tbs
sugar - 6 ounces milk - 3/4 pint or 400ml roughly eggs - 2 (seperate white from yoke, beat in seperately) mango or whatever soft tropical fruit - diced
1. bring 8 oz (just under half pint) water to boil - stir in sugar.
switch stove off (or keep on low heat) and quickly continue to
2. then pour in lquid gelatine mixture. keep stirring as mixture simmers. 3. add custard/corn starch mixture - stir until about to boil. 4. pour milk and stir briefly
turn off heat if you kept it on low heat
5. mix egg yokes first, and then whites. 6. add pieces of fruit
stand mixture for a minute before transfering to container/mould(s) cool off before refridgerating.

Raw eggs...?! Mixed in with rice and stuff then yeah, i get ya but just itself like how Rocky Balboa does it, pass lol.

Mango pudding was a success~
We failed twice on the way but third time's the charm.
Riot mixed the gelatine mix with custard mix together first by mistake and the second time the water was too hot and the gelatine hardened up in the pot.

Lol. First time was my mistake, second was bro's for boiling it super hot, third it seperated by itself by some other divine intervention and it was on the FOURTH attempt that was a success when we speeded the proccess up dramatically. Kekeke. XD PHOTOS~ As you might notice, there was sediments because either there wasn't enough water to dissolve it or bro didn't stir it enough. Ah well, still tasted good. <3

Dingo: yeah it could be a bit yellower... but it may well be the colour balancing of Yena's camera...
Well if you turned the heat off completely like your edit of my instructions, it may explain the separation as the corn starch didn't mix properly.
Yena watched mum do it from start to finish and she only turned the stove off at the milk part.
Maybe try a little less milk and a tiny bit more custard powder? Gelatine seemed fine, and we'll have to see how the starch stays if you kept a low heat on for a while longer.
At least you guys didn't cook the egg whites with the heat of the mixture.

I'll mash up the strawberries next time I make some again, because the one just gone was like... too many pieces for the gelatine to set properly. And when I turned the mold over, the strawberries that had all floated was now at the bottom, and couldn't support the weight of the entire pudding (duh) so it kind of crumbled.
So if I mashed up or blended it with the milk before adding to mixture, it'll have a slightly "better" consistency, and won't fall apart as it's all liquid. Could add a few pieces of strawberry halves though.
No pics from here, as I ated it all. :3

mine was all weird when i tried mum's recipe. here's my version... should be around the same size... no need for custard powder * 1 tablespoon unflavored gelatin * 3/4 cup (175 mL) sugar * 1 cup (250 mL) hot water * 3 cups (750 mL) pureed fresh mangoes * 1 cup (250 mL) 2 percent evaporated milk * 8 ice cubes (why ice cubes? its an indicator ) mix gelatine with hot water in a large bowl... mix mango puree... if you dont have it... squish some mango fruit up and use that... just would have to reduce it a little in the pan. put in evaporated milk and ice cubes... put gelatine mixture into the large bowl and stir... so when the ice cubes are melted and stuff... make sure you have no crap at the bottom of the bowl... sometimes happen if you havent dissolved the gelatine mixture in properly when you added the hot water to it...

btw... you dont have to use mango puree... you can use mango chunks... but you'd need to add a little sugar... maybe a tbspn or two (dependant on how sweet the mango actually is)
and sure it will only come out as pale yellowish... but if you wanna have it orange in colour... the puree helps coz the colour will get mixed into it but custard powder if you're using mango chunks...

yeh dont get put off by the colour... it's supposed to be a little more yellow. but you gotta give them credit for first attempts i never really went with my mum's recipe coz it's too complicated to get the same effect. mine dont even need to seperate the white/yoke. just much simpler will take me around 20-25mins to prepare the whole lot and cleared up lol but the thing is my recipe above is for a smaller portion
